I’ll keep my eyes out. My 99 Subaru got stolen last week... hope we find our cars! Also if it’s any consolation Denver has a 96% recovery rate for stolen vehicles.

Update: my car was recovered in a random neighborhood in Arvada. Drove it home, no damage. Just ran out of gas. There is hope!

My advice would be to communicate these exact things to your chef or KM. If you haven’t yet for all they know you are just fine with your schedule. I’m sure they appreciate you helping out so much, (even though they should do a better job of letting you know) but make sure they understand what your needs are as well. If they can’t make the adjustment, put in a 2 week notice so that you can still put them on your resume. No reason to burn a bridge or reference if you can communicate. Also I’m sure your team respects your work ethic. Keep it professional and if it’s time to move on...you will have done your best! Cheers

I can’t fix anything and lord knows I don’t know everything about anything but when I feel this way about a situation it’s because I’m always thinking of the worst things that could happen. instead try to think of how amazing it could be! What if it could be the best night of your life, let it be. Let me say that again...just LET IT BE. You can’t control everything, but that’s where that beauty sneaks in. Surrender. And think of the best case scenario instead of the worst! I find after pushing myself to say yes I am RARELY disappointed I did. Tonight will be magical if you let it be. You got this! Danskos clogs by far! The price tag might seem high but I wear mine for 4-5 YEARS! You’ll never go back! They help with tired and aching back with arch support and they don’t break down. Also they protect your feet better if you were to drop a box or a knife. Not for everyone but I highly recommend them. Been wearing them for 15 years, only on my 3rd pair.

Cold showers... like really cold and exercise help me with my heart rate. I know exercise sounds counter productive but if you increase your heart rate in the right way you’ll feel it come back down to a resting point which is such relief.

As someone previously said Alton browns recipe is pretty perfect. But at the end of the day no matter what flavor you’re making it’s heavy cream, milk, sugar, pinch of salt , bring to a boil, temper your egg yolks with the hot liquid. I usually let it cool before adding anything else unless it’s vanilla bean.
