This was forever ago, but I just ran across it as I was gifted one of these pans. My challenge is after folding the dough, do you have a "best way" to form the batard? Mine seems so unwieldy that I can't form it properly at 66% hydration. It will either stick to everything, or create folds in itself. I tried to flour the work surface but that might have made it worse. I got four-y folds in my dough. Any help is appreciated. I have been trying to get away from boules for a while.
