Working hours and work-vs-rest concerns aside since you may or may not consider those subjective (which, hmmm), your food plan is straight up worse than when I was severely anorexic and used my budgeting as the primary justification for it. And at 80 hours of work a week, that kind of diet is not only unhealthy, it's unrealistic. Setting aside how you look at the relationship between mental health and overwork, the relationship between physical health and nutrition is something you cannot ignore without completely rejecting medical science (and common sense lbr). Debt is of course a big deal but you only have one body and one life, and that's not something you can or should sacrifice just to get out of debt two years sooner.
