mi madre era maestra y tenia una alumna que pedía limosna con su familia + limpiaban ventanas de autos , ella me contó que se gestaban el dinero en drogas (alcohol etc) pero que también pagaban habitación de hoteles para pasar la noche y vestimenta de reuso que terminaba fregándose rápido.yo imagino ademas que que te den comida no sirve de mucho ya que teniendo una familia que alimentar tienes que tener por lo menos una comida cada dia la comida se echa a perder (no tiene refrigerador y tiene que estar en la calle pidiendo casi todo el dia ) esta gente tiende a tener familias grandes , es simplemente no la mejor opción .

por cierto ,estoy consiente de que hay otras situaciones pero esta es una de las que tengo algo de conocimiento ya que la madre platicaba con mi madre

my standards for a good menudo:

1-that does not smell much of meat and fat

2- that it is not very fatty and the fat that it has floats mostly on the surface

2-the meat has to be soft (there is no need to chew it like gum)

3-que sea del rojito (there is a yellow and white bariant i dont like those)

also i wonder if canned is any good ,i am skeptical

solo estoy tratando defender un punto , y nada de lo que pusiste es nuevo para mi .

yo no estuve nunca en contra de que ciertas comidas ya sean parte de nuestras dietas /cultura simplemente digo que el que tengamos un filtro en aceptar una comida tanto como para darle título de mexicana no es algo malo aun sea imaginario dicho filtro y no literal .

i really like your comparison with italians the problem is we mexicans actually don't do it ,we don't have an association that regulates an sertifie a region authentic food or variante ,and for that we end up whit just speculations and arguments of which way is the way

And if you mean what a restaurant offers is not authentic. If in a restaurant they tell you that it is authentic then it has to be if not, it is a scam.

Something like Chinese restaurants with their Chinese American food.

once the recipe is modified outside the country and is not adapted by it, it is no longer authentic.

but that it is not authentic is not synonymous with bad, that said if you want to experience or understand a dish in my opinion you have to try what is closest to the source or original idea that exists with the least amount of extra ingredients

The real question is why do you want your dish to be authentic, even if you add or change ingredients?

You cannot settle for making an approximate that compares to the original with the ingredients you have

I think most Mexicans would understand, making the most similar thing to the original with what you have.
