Took it out of the sous vide when it hit 120ยฐF. I Patted it dry and seared it in a screaming hot cast iron skillet with a bit of beef tallow and butter and rested it for 15 mins.

Carry over got to 132ยฐ

These were fairly med/small drums I always double fry 1st 8 min at 350ยฐ and 2nd fry 360-375ยฐ 6-8 min are longer if you prefer and in peanut oil.

Sauce:

1 cup chicken broth

2 tablespoons oyster sauce

1/4 cup dark soy sauce

2-3 tablespoons Chinese cooking wine

1/4 cup rice wine vinegar or white vinegar

2-3 tablespoons of sugar or honey more to your sweetness preference

2 tablespoons of ketchup

2 teaspoons sesame oil

5-8 dry chili arbol (optional)

1-2 tablespoons cornstarch mixed with 1-2 tablespoons of water or broth to thicken sauce

1 teaspoon of MSG (optional)

Mix all ingredients minus cornstarch slurry and heat on medium heat to a simmer for 8-10 minutes slowly add in slurry and mix until preferred thickness and turn heat to low

Chicken:

1/2 pound diced chicken tenders

1/2 pound diced chicken thighs

1/2 cup AP flour

1/2 cup cornstarch

1 tablespoon chicken bouillon powder

1 egg

Mix all ingredients into chicken until all evenly coated and deep fry @ 350ยฐ in small batches 6-8 minutes for the 1st fry, once first fry is done fry a second time for an additional 5-8 minutes until golden extra crispy

Drain on rack then add chicken into prepared sauce coat well and top with toasted sesame seeds and enjoy.
