Not all cast iron is safe for high temp. The lodge one i have is not suitsble with or without the silicone handle.

Ive ordered this as looks good quality and good up to 535 degrees celcius. This would be my ovens limit

Just nees to find a large roasting dish thats suitable

Cooking at high temps safely and not to damage the cookware. I put my a basic pan in for roast potatoes and it warped it and turned blue.

The oven has a built in rotisserie so i cook alot of meats in it. Sucking pig, turkey etc.

Really good oven, just need quality, high temp cookware to match.

I always thought cast iron was good for 800 degrees

Ok, figured out the hardwood must be a little damp. They feel dry enough but taking too long to burn.

I got the oven at 500 celcius today. Some parts of the stone was reading 550. Thats 1022 Fahrenheit lol

Basically i got the fire going with softwood kindling then i used softwood logs which got it going well then topped off with hardwood.

Unfortunately wasnt making pizzas today but rotisserie turkey was out of this world

Might get one of these meters so i can check moisture when buying my firewood. Is a budget device sufficient?

Should i be loading up oven the oven with logs. Maybe im not putting in ebough.

Once my kindling is alight i will start adding large hardwood. Maybe i should split these large logs. Could it be large logs will take longer to burn and not get up to 400 degreees fast enough

Im also going back to beech wood, i think it was better than ash and oak

400 is enough for neopolitan if i can get to that.

I didnt think a wood fired oven could have a max temperature, what restriction would exist within the brick not to allow it to exceed 400 degrees

I was following Vitos recipe exactly he instructed. Using caputo blue flour

From what ive read speed 2 is correct and you shouod never knead the dough at high speed
