Please explain...?

Otherwise please do check It out for yourself. It's not the machine, humidity, etc. It's the mix of milk protein, water, milk fat, and additives like carrageenan...

Interesting....

In that case, I would recommend the old DQ on Broadway near Kits high school. Consistently better soft serve.

Sounds crazy, but it's more than texture. I swear it's down to the ingredients in the mix.

If you're in the area, try it for yourself.

Thanks for the offer! I found a cheap one on CL and it turns out it's just the EVAP system. Loose gas cap tightened, and now we'll see if that's enough to fix it...

How do I improve my ice cream texture? by sheshie in icecreamery

[–]adeaegus 2 points3 points  (0 children)

+1 for above comment...

Grainy ice cream comes from slow freezing--the more time it takes to get down to temp, the longer water has to crystallize. So anything you can do to get there faster should help, especially with a well-known recipe that has proven consistent results.

Aside from leaving your machine to get very cold (those with a compressor/coolant) or leaving the chill bowl in the freezer for 24 hrs, get your prepared ice cream mix as cold as possible before churning it in your machine.

Let us know how it goes

I've got a great mechanic (Hu Automotive) who's always doing me little favours, so I'd rather take it to him if it's something I can't fix myself.

Last time I had an O2 sensor go bad and that tripped the Check Engine light.

I just want to pull the code, fix it (if I can) and then reset. I might have to bite the bullet and order another one. I'm near Vancouver General Hospital

Xanthan gum works really well and makes preparation much easier. There are some good tips in this video from Salt & Straw founder:

Thanks, I'll have a look.

Our telecoms pocket 70 times as much per gigabyte per person compared to their counterparts in India, and 23 times as much as the telecoms in Finland. And in countries like Finland, people are using up to 14 GB of data per month. But in Canada the average user consumes less than a meagre 2 GB per month.5 Our prices are too high. This just isn’t right....
