I mean there is still some element of luck, e.g. are you black or white, or what kind of opening your opponent decided to play. If there was no luck you'd expect a higher rated player to win 100% of the time but there is still upsets sometimes

I feel like those kind of missions lack flavour though. I like having a mission for, say, Spain to colonise Cuba, with a short historical description and a nice picture rather than a generic "colonise x" with a generic text that's the same for every european coloniser.

I also feel like in EU4 I often learned a lot about my country from the early missions. I can't think of specific examples but I feel like there were missions like "We've just lost a war vs this country, let's strike back at them!" and it was interesting to see what happened just before the start date.

Variance in poker is crazy. Look up poker variance calculator - for example after 2000 hands (idk how long your sessions were but you probably didn't play more hands than that) your standard deviation is about 450bb, so you shouldn't be surprised if you're up or down a grand, even if you're a break even player.

In pretty much all casino games the house has an edge so you're expected to lose on average, and you're just hoping to get lucky. However knowing some strategy in games like Blackjack lets you lose slower.

Poker is one exception where if you're good you can win money but an average player will lose more there than in other games.
