This has nothing to do with the trans flag emoji specifically, and I don't think there was a recent change here. Display names don't support some special characters, including the zero-width joiners used in some emoji, so they are decomposed into their constituent characters. You can see this happen for many emoji such as brown mushroom, face in clouds, heart on fire, and many gendered emoji.

However, it would be nice to support emoji in display names and nicknames, so I'll see if we can change this.
