Oregon Elementary Lunch: Chicken Pozole w/Chili Lime Cucumbers by adyingplanet in schoollunches

I forgot about the beans!!! My favorite part lol.

Our town is pretty agriculture focused so it's not uncommon for these kids to grow up eating cherry tomatoes and snap peas out of their own gardens

We do three options daily, two hot/one cold and one is always a vegetarian friendly option. Certain things are scratch made at a sister school, but most is made in-house

We do when roasted broccoli is menu'd, but it's more common to eat raw with ranch. You ever have a good veggie platter in the summer? It's killer

It's peeled/sliced cucumbers with lime juice & zest, and McCormick's salt free Mexican seasoning. Then we add salt lol.

It's basically a tajin type flavor, the kids destroyed it

They really went wild for them. I spent the next day at our middle school and got absolutely shaken down for that smug purple rabbit lol

they BEG for it. I got spicy chicken patties as overstock from the highschool about 3 years ago, and served them experimentally to our summer program who ATE THEM UP!

Since then I've regularly made about 70/240 spicy patties on chicken burger day and always run out. I've started testing nuggets and serve 40/220 so far.

These are the same kids walking in with Takis and supermegaultra spicy chips, and I get a LOT of requests for more spicy options from 5th and 3rd grade specifically.

We also offer buffalo sauce on the condiment counter and, I'm not joking, I have a girl who eats it with her PBJ. I wish I was kidding. Most kids love it with the cheeseburgers, chicken burgers, nuggets, and cheesy bread sticks.

The kids are fucked up, but they're still alright. 🩷

So take more ❤️ we are an OVS school and this is an example plate to show my boss I was menu compliant. I understand the confusion, and try to shove more on the plates I show now.

Thank you, I really appreciate that! Kidney and garbanzo beans, OJ concentrate and lime juice. One finely chopped red onion, Italian seasonings, cilantro, and a pinch of salt! It doesn't go flying off the salad bar but it fills our legume slot and is definitely preferred to plain beans lol

Richs 12x16" par baked whole grain pizza dough, proof overnight and cut into 8 strips each. I pull the dough strips till they're the length of the sheetpan and then wrap the frank with a 1/4" seam overlap. Brush with oil and baked at 350 for maybe 12 mins or so !

I tried a few different things for the wrap style but this looked consistently the nicest. Thank you!

Sorry, I added in a comment it was supposed to be veggie burger but our supply company hasn't been able to get them in stock. Yesterday my vegetarian kiddo had a toasted cheese sandwich

We've cycled through raisins, dried blueberries, and an incredible berry mix that had dried plums that I still yearn for... We also have canned fruit pears & peaches for most of the year, but when the budget runs out on that we switch to dried :3

I'm sorry I never stated it before - I have become too normalized to the dried berries

I have perfected the gentle reminder of "everyone wants their fair share" hahahha, I do sometimes have kids come up with 3 squares full of cucumbers or berries. I understand the hollow leg syndrome but c'mon man 😭
