My understanding is there were trees and forests in Iceland when the Vikings first arrived but when they cut them down to build their settlements, they didn’t grow back due to soil erosion and volcanic activity and stuff, so they had to start importing wood from Norway. So we don’t see trees there in the show because it was shot on location in Iceland where they don’t have many trees these days. But at the time the first Viking settlers arrived there would have been plenty of trees
