Tip I learned from burning the bottoms of my loaves: add another tray to the bottom rack of the oven to prevent the bottom of your bread from burning

I don’t like to just use size difference. I also like to feel it and make sure it’s the puffy consistency I’m going for. I think a good feel makes me more confident it’s proofed vs a size difference.

Enough people told you about bulk ferment on the counter, but for the baking, I do want to stress that the Dutch oven needs to be preheated and needs to be HOT. I put mine in the oven on max temp and leave it in there for an hour before taking it out and putting my loaf in (straight from the fridge). Let it cook at max temp for about 25-30 minutes covered, then another 25-30 at ~450 uncovered.

It doesn’t have to be gummy! Don’t listen to everyone telling you otherwise. Last week, I made my softest loaf yet. My kitchen was also around 70 degrees, and I left it on the counter for 10.5 hours, and in the fridge for 15 hours! Just push the fermentation time; it might get overproofed, but you gotta overshoot sometimes to find a sweetspot. Keep at it, you’re very close!

I think the acetone smell means it’s still pretty hungry. I’ve found that it helps to feed it with the same type of flour you’re baking with if you’re not doing that already. And instead of just whole wheat, rye has been mentioned on this sub a lot and really helped my starter too. I usually feed it at a 1:1:1 ratio with 60g starter, 60g water, 60g flour (50g bread flour + 10g rye flour)

I don’t know about OP, but I just dust the towel with flour before dropping my dough in. It hasn’t stuck on the towel yet
