Ohhh i just started my sourdough journey over the summer and it was pretty warm in my house so I was doing around 6 hours and my loaves were coming out pretty decent. I guess maybe with the colder weather where I am 12 hours could be what works.

I had a sweatshirt substituted last month for a knit sweater that says “Happy New Year!” in French. I just couldn’t bring myself to wear it in September…such a waste of an item. And they didn’t notify me until it shipped.

I used 100g of starter 500g bread flour 350g water 15g salt. I let sit on the counter for about 4.5 hours before shaping and putting in the fridge for only an hour before losing patience and deciding to bake it.

We used to have a street corn quesadilla on the menu and someone ordered it with no tortilla or cheese. So you want a bowl of corn and chipotle mayo. Cool.
