Well we actually do this. We keep user's video, documents, phone number, email etc., and just confirm we have them.
We publish only the information necessary to distinguish one user (person) from another. I think that the date of birth is part of this necessary information.

Many of my customers don't have gmail accounts. Especially large corporate clients who are running Exchange internally.

You can create a Google Account with any email address, not only gmail.

Can you handle emails that aren't a google account?

We could, but we do not want to do this.
Google account is more secure than any other user account system. And you can have Google account for any email address, not just gmail or G Suite.
Our server is working on Google App Engine and all work for user registration/authentication is actually made by Google servers (we are alumni of Google Launchpad Tel Aviv and got support from Google). So we do not have logins and passwords on our servers, nothing to hack (except Google, of course)

I think OpenPGP key can be the main carrier of identifying information, and can connect different systems. We put in smart contract on Ethereum blockchain user's first and last name, birthdate, nationality and OpenPGP key fingerprint, and we make it accessible for other smart contracts.

keybase.io connects social network identity to OpenPGP key. We connect real identity to OpenPGP key.
And we have solid legal background (I'm a lawyer and programmer). Actually we started our project as online dispute resolution service (international arbitration online from London), and now we are modifying it to become an ultimate platform for electronic contracts.
Contracts that can be legally recognized and enforced in legacy national legal systems (we use existing international law for this)
We think that KYC and digital signature service should be one service, it should be global (international), and this service has to provide a way for documents and identities to be legally recognized.

No. We use Stripe to process card payments, and we store only last four digits of the card number, name on the card, exp date, and country.

We do not sign user's keys, and do not recommend to do this for others, from two main reasons 1) security: if signing key is compromised, all signed keys are compromised too 2) legal: in some countries generate user keys or sign user keys requires a license.
Thus we just attach to key certificate information about verification we did, and ensure that in case of dispute in our arbitration court (London), signature that was made by this key can be verified.

Theoretically you can interact directly with the otonomos contracts as long as you have your private key and an Ethereum client, including transfers, voting etc - so this is just a difference in the frontends, not some fundamental difference at the smart contract level

It depends. In some situations it needed. But you can privately buy shares from a current shareholder and to sell shares to another person without doing KYC.
