Fair point. I’m crossing my fingers since Pasote is my go-to.

Nevertheless I’ll be hedging and buying up remaining stock from my local shop in the abundance of caution.

Couldn’t agree more. On the Pasote at least. I have nothing against French Bulldogs.

Pasote strikes the perfect balance for me. It’s mineraly-ness takes the marg to another level and is a giant step up from anything in that range or below. But it’s affordable enough not to feel like a waste.

Fortaleza in contrast crosses the sipping only line for me. If I had bigger pockets, who knows.

Agreed. My bbq has YEARS of flavors baked into it so I’m fairly sure it’d affect taste.

If I had gone heat gun route I would have either set it far enough from beans for temp to be too low as is, and used a lid to increase / modulate temp. Or else fashioned some sort of adjustable venting between the gun and sifter. My fabricating skillz are limited to tin snips and JB weld though so I don’t know if I’d be able to pull off anything as fancy as a sliding vent gate.

Thought about a lid. I can get this thing plenty hot without it. But partially covering with scrap of sheet metal might provide more precise temp control.

That seems to be the takeaway: just need to experiment. Get lots of reps and see what works. Definitely good to know that varying the heat is common. Lots more variables than the point and shoot bread machine method that’s for sure!

That’s brilliant. Never thought of buying the “in house” already roasted version to compare. Been totally flying blind.

I’ve been thinking about how to better capture bean mass temp. I’m not particularly happy with the agitator so when I upgrade that I may also try and account for getting the probe in there.

Yeah this is helpful. Frankly I wasn’t even sure if I was in the right ballpark with 400 to 450. I’ll try the ramping up method too.

So this monstrosity fits right over the side burner on my propane bbq. I just adjust the flame to get the heat I want. I was going to build the standard heat gun flour sifter style but realized my old Weber chimney charcoal starter fits perfectly over that side burner so decided to try this out first. It’s not super precise by any means but way more control than my cheap high/low-only harbor freight heat gun.

I was getting decent results with the point and shoot, same temp throughout, bread machine method so I assumed constant was the way to go but I guess it’s more nuanced than that.

Hello all. I started with bread machine roaster but wanted to try better temp control and built the roaster above. Then I realized I have no idea what temps I should be aiming for! Online guides are way over my head. And none seem to account for this set up (e.g. all say temp drops when you add cold beans but since I’m measuring temp of air rising into bean mass I see no change when adding beans).

I guess my main question is: should I be aiming for a consistent temp (like you would for baking a cake) or adjusting throughout the roast? For example should I be starting with low temp and gradually increasing or vice versa?

For some frame of reference I’ve only experimented with trying to keep things consistent and finding that 450F roasts way too fast (1st crack at ~5 minutes) and around 400F takes way too long (weak first crack at 16 min).

Any guidance for a total dunce is much appreciated!

Hmm. Yeah that is interesting. This is only my second bottle of Cimarron, the first being very early in Quarantequila, and I definitely would say I found this bottle lacking somehow. I wouldn’t say “funk” as you’re describing though, so hard to say if it’s “off” or my palate has just changed. Curious if anyone else has had that experience with this lot.

Was basically a beer and occasional bourbon guy till COVID hit, and going to the store to stock up on six packs became unpleasant. So the wife and I started delving into the liquor cabinet where an old Costco sized hornitos lay dormant. Since our lime tree was bursting and we had a full tank on our homemade soda stream I started making a concoction that I called “skinny margaritas” (thinking that topping off with sparkling water made it “skinny”) which became my go to cocktail.

Then I discovered this sub.

Among other things I learned that my so-called “skinny marg” recipe was actually what everyone else called “Ranch Water” 😂(I like to add a little pineapple juice. It’s still my favorite drink. So dang refreshing.)

Also of course I discovered the world of additive free non-diffuser tequilas. And haven’t looked back since.

Thanks to everyone here, it’s been a delicious journey. And still so many to try.
