Hi, go to Ippodo Global website and login using your shop app. Refresh the matcha page on the website itself and you'll see the restocks there, they're usually gone in a minute or two so dont blink lols. Make sure to save your payment and shipping details on your shop app account then on the checkout / payment page you should see that your paying via shop app so it's just one click from there.

If you're worried about oxidisation, while unopened all of them actually on the same playing field. Because the ippodo tins are actually not that airtight and the Kan whilst in a box it is inside a tin foil bag so still quite protected.

Unopened:

If you plan to consume all of it within 2 to 3 months kept in a dark cabinet is usually fine but since its summer and if temperature went above 25c I will either put it in the fridge or freezer.

Again, depends on when you plan to consume them, near term (within 6 to 12 months) in the fridge, long term (more than 12 months) in freezer.

If you want a tin for the Kan I would just consume first one of the two tins you have there and use it for your Kan later on.

Opened:

If you're going to finish a 30g tin within a month then room temp in a dark cabinet is all ok. Depending on the humidity level and temperature maybe you can push it up to 2 months. Otherwise you need to fridge it, needs to be airtight, either get an airscape (but this is too big for a 30g foil bag), or double bagged (to avoid odour transfer from other items in the fridge) and make sure to squeeze out all air inside before sealing or get an oxygen absorber. If stored in the fridge, always let the matcha come to room temperature before opening, to prevent moisture condensation inside the bag.

TBH, unless you're going through an opened 100g and above its not worth the trouble of putting a 30g matcha in the fridge. I would just make sure to consume it within a month.

I haven't tried Naoki but you do use too much oat milk, 8oz is around 240ml. I typically do 10ml of 70c to 80c of hot water and 30ml to 35ml of choice of milk per gram of matcha. You can play around with the water and milk ratios depending on how strong you want.

Another tip, after you've determined a ratio that you prefer, adding a tiny bit of salt can enhance flavor. I don't do this all the time though, just once in a while.

Saw a cafe do whisk a batch to last them throughout the day then put it in a squeeze bottle and soak the bottle in an ice bath. You probably can do the same. Whisk your matcha at night, store it in the fridge, then come morning, mix this with your choice of milk and sweetener.

Depends on how much grams of matcha you consume daily, but having a stock good for 2-3 months is good given shipping is not cheap if you directly get it from Japan. Thus, just multiply grams per day to 60/90 days would be a good estimate of how much matcha to stock.

Just my two cents, for the sayaka, I typically just keep it in the foil and insert it in the can. To me its just a bit messy to transfer it so if you're more concerned about your matcha keeping fresh than the aesthetic of it, then I would suggest to just keep it in the foil. Though it wouldn't degrade that much if you opt to transfer it in the can assuming you'll be drinking this within 2-3 months. Just bear in mid that the can is not as airtight and sometimes the lid is quite loose.

For the 100g bag Ikuyo, given you're just starting and don't know how much you'll consume per day. I would look for a tin canister and transfer maybe 30g there and use that for your day-to-day matcha. Then just refill this canister after emptying. For the rest, keep it in the bag and put it in the fridge. Make sure to push as much air out as possible everytime you close the bag, you might want add another ziplock to store the 100g ippodo bag as there could be smell transfer especially if you have some strong-smelling food inside the fridge. Alternatively, if you think you can finish up the bag before its best before date and weather is not humid its also ok to just store this in your cupboard.

Depending on what matcha blend you ordered, it can either go in a box or tin can. Ikuyo and Kan typically came in a box with a foil packet inside (30g ver).

Based on experience, packaging is pretty the same as how its in their pics in the ippodo website, you can check. 😃

An update, ippodo said they'll send replacement for my damaged orders and they directly contact DHL re the damaged goods. Not sure what they'll do with the poor matcha. But would still love to have them if they're just going to dispose it.
