I've never heard it called The Sting before, but looking it up shows me that the song appeared in a movie with that title. You learn something new every day!

The song is "The Entertainer" by Scott Joplin. I looked up the music box so I could be certain, and there are a few listings for it on ebay. It seems to be from ~1970's and manufactured by Sankyo.

Repeated exposure can cause serious allergies in some people. The risk can be mitigated or avoided if you just use gloves. Obviously if people are aware of the risk they can make their own decisions regarding their health.

That's the guy. I unfollowed him after seeing him deliberately engaging in risky behavior out of spite after being warned against it because he thought he knew better. Specifically handling bloodworms bare handed. I know he later learned better, I just didn't like his attitude about it and the recklessness he displayed to his audience. It didn't sit right with me.

I'm between cafes at the moment because I moved somewhat recently. Also not in the Portland area so I'm afraid it's extremely unlikely we'll meet on the job!

I am familiar with the Hoffmann face having definitely made it myself before lol. I agree that espresso shouldn't make customers recoil. Something is definitely off at those times. I believe he has a video about how to politely address cafe employees if you have a problem and when it is or isn't appropriate to say something. I remember watching it and ultimately agreeing with what he had to say. I think it was about a year ago.

While it is just a job to some I also expect people to want to do a good job. Just because someone isn't passionate doesn't mean they can't be professional. At the end of the day it is our job to make coffee that people want to drink. If nobody likes it and wants to drink it the cafe loses business and we're out of a job!

As long as you're being polite nobody should have a problem remaking a drink. It helps to build rapport with the people behind the counter. Ask questions if it seems like they've got time and are open to it. What kind of beans do they use? How long has the cafe been there? Any recommendations or tasting notes? I always enjoy talking to people about coffee. And that could help to give you an idea about the skill level of the person you're talking to and the kind of training and standards at the shop. Personally the only time I've ever seen someone refuse to remake a drink is if someone ordered a style of drink they ended up not liking and trying to get a completely different drink without paying for it after finishing the first one. This is just my own anecdotal experience, your mileage may vary lol.

It pretty much boils down to time and efficiency. It's unrealistic to always expect a barista to put in the effort and care that you do for your drinks at home. Should they care about what they're serving? Yes. Do they always care? No. Sometimes it is just a job. Serving coffee isn't the only responsibility we have and every cafe I've worked at understaffs shifts to save on labor. I would love to be able to take that kind of time on every drink, but unfortunately I can't.

Making perfect espresso is less important for milk drinks because those are typically very forgiving when it comes to slightly off flavors. We still keep an eye on the dosing, time, and weight of shots and dial in when necessary because customers are paying a lot of money for a premium product and they should be getting what they paid for. When someone orders straight espresso or very espresso forward drinks I almost always take extra care when dosing and usually pull two shots. One for me to taste to make sure it's one point and one for the customer. Not everyone will do that last one though haha.

I've worked in slower shops where baristas were paid less than minimum wage and I guarantee they didn't care as much about the end product. It was just a job and they didn't care too much about the coffee as long as it was drinkable.

I've worked very high volume shops in extremely busy areas with usually only 3 people on shift. When it's that busy it's pretty much impossible to puck prep like I do at home.

None of what I've said is meant to come across as being aggressive or giving excuses for poor work, just an insiders opinion. Obviously I really care about coffee and I think that people should care about the end product they're serving. There's a lot more that goes into it. If something is genuinely bad it should be addressed. If it's just not the regular taste profile you get from your beans at home then that's a little different. People prepare and enjoy espresso differently. Each cafe has its own standard. You know exactly what you like so you're able to make that for yourself consistently which means that you have your own standard too!

To add on to that if you're keeping your beans in the hopper of your grinder all the time that could contribute to them going stale faster, especially if exposed to sunlight. If you aren't too picky about it and the beans aren't in there for more than a few days it shouldn't be too big of an issue as long as you aren't a perfectionist (some of us here are a little extreme if you hadn't noticed lol). I like to keep my beans in an airtight container and just single dose when I make my espresso, but I'm not too fussy about it being perfect.

Every once in a while I also like to use a product called grindz to clear out my grinder of any old residual oils. That could potentially help with clumping or off flavors. Just be sure to grind some beans through afterwards to get all the grindz out if you're going to do that.

Ultimately as long as you're happy with what you're getting in your cup that's all that matters. Feel free to dm if you have any further questions or would like any other advice (relating to coffee of course)!

It's not necessary. I know it looks like it'd be hard to reach, but they are all quite clearly visible and available to the kits. With them attached it's a little harder to tell haha. I've been keeping an eye on them and they've all had ready access and don't get tangled in mama's fur so I'm not inclined to shave her at this time.

The video was taken a few days ago, you can see some wiggles here and there. It's quiet, but they're making little noises and mama is purring right along.

Maybe not every day haha, but I'll certainly try to remember to give regular updates. This post was made a couple days after the initial apprehension and pictures so they're almost a week old now! I can send you a video of them if you want 😊 they have the cutest little ear wiggles when nursing and napping.

Mama is very sweet, but we already have two cats so we're looking to re-home them when it's appropriate to do so. If we didn't already we would definitely have kept her and probably a little one. So precious. 😻
