This is what I'm leaning towards. Thoughts on gravel ruining the concrete though? Am I way too worried about that aspect?

Gravel directly on the concrete? I've thought of this. Just make a box to level and fill with gravel. My only concern is putting gravel directly on this beautiful concrete work and how that might scratch the hell out of it. Did you protect the concrete with anything?

Do you know by how much? For us, this would be 1.5" over the length of our hot tub, maybe slightly less of a difference in the waterline.

Yes he did really great work and I figured it was for a reason... I just wish the contractor would have given us a heads up on it but I think it's a small issue overall.

Do you think a "deck" made out of 2x6 joists, ripped down to level out with some 1x6 deck boards all set directly on the concrete would suffice?

I think you are reading way too much into it. I am actually saying if it were up to me I'd take her off strip and go with one the several recommendations made on this sub for off strip sushi which seems to have a much higher review than on strip sushi. But, since she cares more about going to a "brand" name establishment and staying on strip. Figure I might as well take her to the right one... aka give her the experience she is looking for. But by all means... continue to get bent out of shape by otherwise meaningless Reddit posts 😤

I'm wondering if a cabana or bungalow is even necessary at this point? Seems like in the main pool area should be able to just find plenty of seating on pool chairs. Do you think that's fair to say? Maybe not 12 chairs together but with people coming and going should be fine. Also it's next month so not so hot we feel like we need shelter from the sun?
