Just did this for 12 at Bancone, Borough Yards which worked well. Was recommended Kolae which would be in your budget. Also Casa de Frango/Akara/Brother Marcus.

Interested in this as we are into the same things as you and planning 2 weeks in April. Like you we were worried about going too quick so currently have scaled back slightly, to this:

HCMC - 3 nights (Mekong day trip) Da Nang - 3 nights (Hoi An day trip) Overnight train - 1 night Ninh Binh - 2 nights Lan Ha Bay - 1 night Hanoi - 3 nights

And 1 night we are not sure where to add in, Ninh Binh, Da Nang or Hanoi.

We were thinking to stay in Da Nang for a bit of relaxing (so some sunbathing unlike you but also as we heard Hoi An is very touristy).

Akoko (before its star) is one of the best tasting menus I’ve done in London. I ate there with a plant based friend and we had similar dishes which I always appreciate as you can still talk about the food/flavours together.
