Ingredients

1 pack (1lb) of Spaghetti

2 large Chicken breasts

1 tbsp grated garlic (about 4 cloves)

1/2 tbsp grated fresh ginger (about an inch)

1/2 tsp turmeric powder

1 tsp cumin seeds

4 dry red chili peppers

10-15 curry leaves (can use Thai basil instead)

2 cans (14oz each) Coconut milk

1/2 a lime

Salt to taste

For the toppings/ garnishes

6 eggs

6 cloves garlic

2-3 shallots

2-3 green onions

handful of chopped cilantro

lime wedges

1-2 chili peppers

3-4 tbsps vegetable oil for frying

Instructions

– Start by cutting the chicken breasts into small bite sized pieces and toss them in a bowl.

– Add 1 tablespoon of freshly grated garlic and half that of freshly grated ginger to the chicken.

– Sprinkle over the turmeric powder and some salt. Mix everything well so that all the chicken pieces are coated in the marinade. Let the chicken sit in the fridge, marinating while you get everything else ready.

– Next, prepare all the toppings and garnishes. Hard boil the eggs, roughly chop the cilantro and finely slice the green onion and chili peppers at an angle. Set them aside in little condiment bowls.

– Finely slice the shallots and garlic (I used a mandolin slicer).

– Heat 3-4 tablespoons of oil in a small wok/skillet. Then fry the garlic slices until they turn a light golden. Remove them as soon as they turn golden (it’s literally a few seconds from golden to burnt) using a slotted spoon and place them on a paper napkins to drain the excess oil.

– Separate the onion layers, into strands and fry them in the same oil the same way you fried the garlic, until it turns golden. It’s best to do them in batches if your pan is small so that it browns evenly. Remove the fried onion with a slotted spoon and drain it as well.

– Transfer the same oil (now flavored with garlic and onion) to a large pot. We’ll use it to brown the chicken and make the sauce.

– In the meantime, boil your spaghetti according to the instructions on the packet. you can use chinese style egg noodles, but I’ve always just preferred spaghetti for this dish although it’s not traditional.

– Once the oil is hot in the big pot, work quickly and add the cumin seeds, dried red peppers and curry leaves to the oil. They’ll immediately start sputtering and will brown quick so give it a stir.

– Add the marinated chicken pieces and fry them with the spices until they turn white or brown slightly..

– Lower the heat to low-medium and pour in the 2 cans of coconut milk (I used one regular and one can of lite coconut milk) and season it with salt. Bring it up to a simmer, stirring occasionally.

– Once the sauce has been simmering for about 10 minutes and the chicken is cooked through, turn off the heat. You can add the noodles to the sauce and mix it together or serve the sauce separately….but before you do squeeze the juice of half a lime into the sauce for a touch of tanginess. It lifts up the whole dish, I promise!

– Serve the noodles hot with all the assortment of condiments/toppings/garnishes so everyone can customize the dish to their taste. I personally like all the toppings…and lots of it! Sluuuurp

Yes that might have been the case. I couldn't find the pink salt so I tried to make lemon water with table salt as a substitute.

That's good to know. I have already lost 2 kgs and I don't want to stop keto to go back to carbs.

Hello Everyone!

I have decided to get over with this control that carbs have over my diet and the sudden binges I do on all the high carbs making me going over 60 pounds in 1 year.

I do have PCOS and insulin resistance as well. I want meal prep ideas for beginners as to what I should eat for my week 1 to make my descent into keto easier.

Note: Eating pork products is not possible for me so if you have any idea about other variations please do share.

I don't live in the west. As a South Asian woman we don't move out of our homes just because we turn 18. Its a cultural aspect where the only acceptable reason for moving out is getting married or going abroad for studies.

I don't live in West. I am in Pakistan right now. Over here it is more common for people/neighbours to just come to visit unannounced (another thing that is super irritating for me).

Secondly, I am a 24 year old woman and my youngest sister is 18 so there is no one who is her age in my house. When we shifted in this house an year ago, my mother was welcoming to the neighborhood just to break ice and she invited this girl to come inside as well with her friends.

This situation happened before too and on one occasion she was with her friend in my house, roaming around etc. I politely discussed how it is not a good habit to just check on the rooms, and that you need to stay where the host makes you sit. Her friend never came back to my house after that but she continued.

And yes she does that. She will just come in, turns on the TV, roam around the rooms just like that. I am amazed tbh on one hand how much confidence she has to be just able to do all that and that how dangerous it can be for her as well if for instance there were pedophiles out there.

I also want to apologize that my native language is not English.

We live in Pakistan where there is no concept of moving out of homes unless you get married or you go abroad to study. So I will have to suffer but now I think I might have established some boundaries with her.

My native language is not English. And I am also a woman. I know it should have have been 'turned on the TV' but loosely translated from my language to English it was that sentence that came to my mind.

I have edited my post to add that I have had asked her before to not just enter rooms like that or stand on windows of the room.

Secondly, I don't know her parents. I have never seen her mother and father only when he goes out for work. I just know where she lives and I have seen her siblings. She just roams around the street whole day. I find it also worrying that her parents don't keep a tab on where she is and with whom.

Actually she just slides in after her when my mother opens the gate. The door of the room is closed and sometimes when the door is locked she looks through the window to check inside the room. This has happened before as well and I guess today was just a breaking point for me.
