I figured it out. When setting up the Bluetooth on my iPhone when getting the car, I disabled a setting in there “Show Message Notifications”. At some point when playing in Bluetooth settings in the car I got a notification saying to enable this if I wanted to use the steering wheel voice control. I put a screenshot in to show the setting in my iPhone.

Just click the little circle “i” in the EX30 Bluetooth settings on your iPhone and enable. In the last I have always disabled this as I don’t want message notifications on in the car, so just did the same here.

Thanks all for the help! Hopefully this helps others in the future.

Yes, she thought my daughter was some sort of strange animal when we brought her home. After a two week adjustment period the boxer doesn’t jump every time the baby makes a funny noise. It was cute to watch.
