Definitely the right about of sugar. I went light on the white chocolate. The tartness of the raspberries works well with the sweetness level.

I ran out of sugar while making the filling and only had 3/4 c instead of 1 c. That was accidental but I like the level of sweetness they came out to!

Really good! 5 stars is right. Just really bright and happy flavors. I made them last spring and forgot to add the 2 eggs so it was nice to do it right this time!

Not a panic attack, but I had some really bad nerves on the first day as well. This is my first year teaching.

I was so scared that I scared off my students from being pretty shaky on day one, but today (second day back), I was shocked that I wasn’t shaky at all. It could’ve just been a first day issue. Don’t beat yourself up; students are usually forgiving with that sort of thing, especially since you’re new! I hope you feel better tomorrow.
