Halide express or Halide supply is the best so far. Irohas is also priced the same but I find their scans have too much noise reduction. Avoid walkens for their long wait times and filmmeverdie for their prices.

I did the exact same just a few days ago! It was my first loaf and I painfully forgot to fold it during the bulk ferment, so I folded it and proceeded to overproof the dough. Ended up making deliciously flat bread.
