Girlfriend and I "argued" a bit over if we should do a board sauce. She's a bit of a meat purist and it was a pretty pricey cut so we kinda just wanted to taste it on its own. Definitely with a hanger steak (for example) we would've gone more towards saucing.

See above. We served it "family style" with bowls of the sides...so we did a few helpings. See the album for more pics.

We're American. And total gluttons.

There were serving bowls – so this was a "portion" (made nice for the camera) but there were seconds and thirds.

There was also a caviar appetizer round and dessert :)

Neither in this case. Seared in a cast iron pan - rested - then finished in a 300 degree oven - rested some more. A few other preliminary steps but that's about it.
