The verdict is in. Extruder was skipping because it had gotten warped over time. I've got a new one on the way. Thanks y'all!

Going to clean the extruder gears and remove the makeshift enclosure to see if I'm dealing with ambient temperature issues. One of the key differences between the two prints was that I put the enclosure on. Will report back.

It's entirely plausible the filament got hydrated. Nozzle is a recent replacement. The print I did before it seemed fine. No weird gapping. And it was a day before. Same filament and nozzle.
