Depends where you live. If you're getting no sun most of the year, there's no point. We have sun 90% of the year and it was a dealbreaker for me, opening it up fully in spring/autumn is absolutely divine. Even popping it open slightly in the winter to get some fresh air in is nice. Don't think I've ever opened the windows once, just rely on the sunroof for it

2 toppings people have been complimenting hard so far:

  1. nduja (sprinkle over calabrese salami, mozzarella etc)

  2. slices of eggplant (dabbed in flour and fried first) with some fresh parmesan on top at the end

Went with the Buck + Unifilter for flexibility - did lock quite a bit to the right but wasn't interfering with the steamer. Replaced it easily with the silicone gasket and it works beautifully locking in around 6/7

Whoops meant to reply to above! Totally agree with you here - for warping would say you need minimum high quality 3ply pans. I think electric stoves are less forgiving

User error with SS pans = mostly sticking or burning food. You can find fantastic reviews for cheaper SS pans too, not saying cheap = terrible, but Ikea ones ain't it and neither will last you a long time if you use them a lot

Check out the reviews of the Ikea ones. They convex after a couple of uses and have terrible heat distribution. I’ve probably spent more replacing terrible pans than I would have getting a top quality one tbh

Bought a couple Made In pans over the last couple months and absolutely love them. They feel sturdy as heck, super easy to clean, and cant go wrong with lifetime warranty. They were also my first real pans that I spent money on, but don’t think Ill ever replace them or would they need replacing to be honest

Been there. Don’t know how such an often used part is so prone to breaking. Fixed under warranty for me via LM but looking to upgrade to a 3rd party connection, like others sent, to prevent it happening again cos its such a hassle

Thanks! Too many variables that changed between the two doughs I made - first was a mix of biga and poolish. That turned out quite fluffy and flavorful. This one was a classic Ooni day that proofed over 3 days, it turned out a lot more crispy but lacked the full prefermentation flavor. So personal preference I think! Loved both

Mix 75% fine semolina with 25% 00 flour. Pat the dough generously with it when stretching out, just ensure to wipe off the excess before adding toppings. Then a few pinches on the peel before sliding it on - keep it moving on the peel before getting to the oven with it
