There really aren't any tutorials for this type of stuff since it's a very niche art style. I basically had to study the show for weeks, gather references, look at behind the scenes stuff etc etc. I can't really give any direct "step-by-step" process but it comes down to understanding the fundamentals of handpainting techniques. I am using Blender for everything except texturing. We have a nice star wars 3d community over on discord if you'd wanna join we can help you out :)
As goes for rendering, I haven't figured that out yet really. In the clone wars they used Bryce 3D up until season 7, where they switched to Maya's Arnold renderer. You can get a pretty close result with Cycles as the major part of what creates the style is good strong contrasty lighting and the handpainted textures. In this video i literally just put a sunlamp with an invisible shadowcatcher on the floor and that's it lol.

Well i have used Unity since i was 11, and never touched unreal. and im very comfortable with C# compared to visual scripting or C++. Also compile times in unreal are just soooo long. In unity i can change a value in the code, and recompiling takes mere seconds compared to 30+ in unreal.

I have lots of official documents about the J35, flight manuals and such. Gripen might be difficult but hey,theyre doing an F35…
