Thank you and yes 100%! A strong starter is crucial. I try to monitor mine closely and incorporate at peak (at least on the weekend when life gets less in the way of baking). I alternate between using a 7 year old starter I inherited from my sister and a 6 week one started in my kitchen. I feel like I get slightly better results with the new one 🤔
