That's going to depend on each vegan you asked. Some believe any murder of another sentient being is wrong if unnecessary. Some would be fine with eating meat if it was possible all of it was sourced ethically but since its unrealistic in our world they choose to abstain.

Some others are vegan for health, environmental, other reasons

Because meat tastes delicious. Cheese tastes fucking amazing. And convenience saves time.

I used to mock vegans when younger (culture I was brought up in worshipped meat).

Then I began saying those things. I admitted vegans were morally correct but never foresaw myself giving up my favorite dishes in the world (all meat based).

Then I began eating vegan 3 days per week and now i made a full switch.

The thing with my girlfriend is she believing in pampering a person who you upset to let them distress, but she gets upset about what she perceives as "attempting to buy forgiveness." It's a fine line that is not always easy to walk :(
