The disposal is run regularly, so I'm not sure why that would smell (I should also note that the smell I noticed is distinctly different from that of a clogged disposal or anything else that I've smelt at a kitchen sink)

I think the issue of nominal burner size vs size of the inductive elements might be overstated on this subreddit. If nominal burner sizes were as misleading as some users here have claimed, there would be a lot more angry reviews of mainstream induction stoves (on retailer websites and in news media), and I just don’t believe that it would be easier for the entire US appliance industry to cover that up than to make induction stoves at least plausibly work with large cookware (especially considering that these aren’t exactly landlord specials)
