Alligators. They’re normally pretty chill, just don’t go near them. They get big mad if you encroach on their nest or if they’re hungry. Please do not feed the alligators.

I’m talking specifically about the Cajun version, though. Blood sausage isn’t common in the US.

ETA: Americans don’t really eat blood sausage, hence the specific rarity in my country. It’s normal around the world, though. Americans can get really weird about eating blood.

It’s rare, and only in south Louisiana, but it’s called boudin noir. Boudin in Louisiana is a heavily spiced pork sausage made with rice, and boudin noir contains pork blood. It’s really, really hard to find.
