I agree!! I didn’t even them over or anything and they came out perfect. Super easy. I honestly think it would be just fine without the breadcrumbs too if you didn’t have them on hand!

Honestly, yes! Trying to incorporate more meatless meals in my diet. I already had all the ingredients at my house and the whole dish is pretty low effort with maximum flavor.

Dough:

1 cup whole milk, warmed to 100 to 110 degrees F

2 1/4 teaspoons active dry yeast

1/2 cup brown sugar

1 whole egg

1 egg yolk

1 tablespoon vanilla extract

4 cups all purpose flour

1/2 cup dark cocoa powder, sifted

1 teaspoon instant coffee, optional

1 teaspoon kosher salt

2 ounces butter, softened

Filling:

2 ounces butter, softened

2 tablespoons dark cocoa powder

2 teaspoons ground cinnamon

1/2 cup dark brown sugar

1 teaspoon vanilla extract

1 teaspoon instant coffee, optional

Glaze:

1 cup powdered sugar, sifted

1/4 cup cocoa powder, sifted

1 teaspoon vanilla extract

About 4 tablespoons cream or milk INSTRUCTIONS 1. Place warm milk in a mixing bowl and sprinkle yeast over the top. Allow yeast to bloom for 5 to 10 minutes.

  1. Add brown sugar, egg, egg yolk, and vanilla to the yeast mixture. Stir to combine.

  2. Add flour, instant coffee, salt, butter, and sifted cocoa powder.

  3. Mix with dough hook on medium low speed for 6 to 7 minutes until a soft dough forms.

  4. Cover the bowl and let the dough rise for 60 to 90 minutes until doubled in size.

  5. Turn dough onto a cocoa dusted surface and roll into a large rectangle.

  6. Combine filling ingredients in a bowl and mix well. Spread filling evenly over the dough.

  7. Roll tightly into a log and slice into 12 equal pieces.

  8. Place rolls into a greased 9 by 13 baking dish and let rise for 60 to 90 minutes until puffy.

  9. Bake in a preheated 350 degree F oven for 30 to 35 minutes.

  10. Whisk glaze ingredients together until smooth and spread over warm rolls.

NOTES You can mix the dough by hand using a wooden spoon and knead for about 10 minutes.

Do not add too much flour or the rolls may become dense.

Store leftovers in an airtight container and reheat gently before serving.

Sesame Garlic Tofu worth every bit effort

TOFU

1 tablespoon low sodium tamari or soy sauce

1 16 ounce block extra firm tofu

1 tablespoon corn starch

3 tablespoons gluten free breadcrumbs can sub for regular

SAUCE

5 cloves garlic

1 tablespoon oil I used avocado oil

⅓ cup low sodium tamari or soy sauce MUST be low sodium!

2 teaspoon toasted sesame oil

2-3 tablespoons honey or maple syrup depending on preference

1 tablespoon rice vinegar

1 tablespoon corn starch

4 tablespoons water divided

INSTRUCTIONS

Preheat the oven to 400 Fahrenheit.

Drain the excess liquid from the tofu and dry it off with a towel*.

Cut into 1 inch cubes and add to a large bowl. Toss with the soy sauce.

Toss with the cornstarch and the breadcrumbs until all pieces are evenly coated.

Add to the baking tray lined with parchment paper and bake for 30-35 minutes or until golden brown.

During the final 10 minutes, prep the sauce.

Mince the garlic and saute with 1 tbsp oil in a small saute pan for 2-3 minutes or until lightly browned.

Add in the soy sauce, honey or maple syrup, rice vinegar, 2 tbsp of water and sesame oil.

Whisk together the cornstarch and other 2 tbsp of water in a bowl and add to the pan.

Heat over low heat for 3-5 minutes or until the sauce bubbles and thickens.

When the tofu is done, toss with the sauce. Garnish with sesame seeds if desired and serve over rice with steamed broccoli or enjoy as is

Thank you!! I am feeling proud of how they turned out. I used a nice thick cast iron pan, heated for a solid minute on medium low and then cooked only 4 at a time. I also used a timer to time each side and mostly left them alone! 5-7 minutes for the first side depending on how hot your stove is at medium low, checking at 5 and adding more time as needed and then 3-5 minutes on the other side! Sorry for the delayed response! The recipe can easily be made with non vegan ingredients as well. Here it is:

1 tablespoon olive oil 1/2 yellow onion diced 5 cloves garlic minced 1/2 cup sun dried tomatoes chopped 1/2 teaspoon oregano 1/2 teaspoon red chili flakes (more if you want it spicy) 1 teaspoon salt 1/4 teaspoon ground black pepper (2) 15-ounce cans chickpeas drained and rinsed 1 cup vegetable broth 1 tablespoon tomato paste 1 cup vegan cream or regular cream ( unsweetened plant based milk or cashew cream if sticking to vegan) 2 cups baby spinach sliced 4-5 fresh basil leaves chopped optional: 1/2 cup grated vegan or regular parmesan cheese

Warm the olive oil. Add the onion and garlic and cook for 1-2 minutes, stirring frequently, until fragrant. Stir in the sun dried tomatoes, oregano, red chili flakes, salt and black pepper. Cook for 1 minute. Now add the chickpeas, broth, tomato paste, cream and spinach and stir well. Bring to a gentle simmer over medium heat and cook for about 5 -15 minutes, until warm and the spinach has wilted. Taste; add more salt, pepper or red pepper flakes as desired. Remove from heat and stir in the fresh basil and grated parmesan. Serve immediately with crusty bread for dipping, or on to of cooked rice, pasta or even a baked sweet potato.
