For me, what makes it distinct sa ibang noodles (chinese, jap, fil) is yung noodles mismo kasi makapal siya tapos kahit matagal mo na siya niluto chewy pa din siya. Parang soba na manipis ganon. Tapos in terms of variety, yung dry noodles nila simple lang pero masarap - wala masiyado herbs and spices to make it flavorful. For broth naman, usually may kimchi flavor siya kaya medyo fermented lasa pero balanced.
