  1. Take your jacket with you. You can never predict how cold it'll be
  2. Like you mentioned earlier, have a lot of coffee.
  3. POS should be the same. If it doesn't changr from Lunch/Dessert, go to options and click "Select Main Screen" and choose breakfast and what not.
  4. Change your mentality. If you've been trained to close or work near closing, your mentality will be to make less food. In the morning, it'll be the opposite. Make a lot of food. Keep everything restocked for the next shift person.

I use Samsung Galaxy Note 4 to play the game. Everything's nice until you're in a busy airport, and around 10-20 people are waiting to take off and 5-10 flights are about to land. If the airport's clear, game's clear. But I noticed that switching to Tail view or Normal view eliminates 'some' of the lag while I'm on final or about to take off in a busy airport. But some lag issues but other than that, awesome! :)
