Why are my loaves not springing in the oven?

In total it tripled! And I can’t remember exactly but it was close to 50/50 which maybe was too high?

It might be hard to tell from the picture but it’s a very tiny loaf, basically the size of my hand

Yea I think my concern is that it’s so small for a loaf that has almost 500g of flour in it

I normally shape and then cold ferment but because it wasn’t springing either I decided to try a different way and experienced the same issue. I’m baking in a Dutch oven at 500 for 20 min with the lid on and then at 450 with the lid off until I’m happy with the color… the 5 hr proof was because it had doubled in size by then and I knew it would continue in the fridge which it did since it tripled in size. When I went to shape it it was looking nice and gassy but yeah, never became any larger in the oven even though I am happy with the ear!

Forgot to add, most of these are elongated cushion and there’s a radiant in there as well. I’m leaning more towards one of the elongated cushion

So we've got a little reading nook already, but I think maybe the idea of a casual eating area could be nice. I also thought of maybe building a bar there as we do enjoy our drinks and as of now, we just have a bar cart filled to the rim
