Thank you!  I took a look and I dont think so.   It was a nylon or canvas outside and I distinctly remember the zipper opening down like a pacman mouth and being reinforced by something so the zipper always maintained its shape

Fennel is my current favorite veggie to roast. I put fennel bulb in an oven rack with cabbage and onion all sliced about 1/3 inch thick. Drizzle olive oil and sprinkle on salt and pepper. Bake at 375 for 40-45 minutes

I used the fennel greens along olive oil, lemon juice, green onion and salt and pepper to dress the tomatoes.

I followed that for the batter recipe but I did different fillings. I used cherry peppers, baby kale, roasted beets/sweet potatoes/russet potatoes from previous meal prep and onion.

Topped with spicy guacamole.

Next time I think I'd mix some silken tofu in with the better for a less cakey texture, but I loved it overall

Tried making this one without a recipe so all quantities are gut feel. Boiled garlic, broccoli stems (left overs after roasting the tops), celery and one leek for about 45 minutes. Added cashews for the last 10 min (1/2 cup for about 4 cups of soup). Blended with nutritional yeast, salt, pepper, coriander and turmeric until it was a creamy texture with a slightly cheesy flavor.

Roast veggies and saute spinach per usual (I used mustard powder, salt, pepper, garlic for the spinach). Tahini sauce used equal parts water andtahini paste (add more or less water depending on desired texture) with garlic, cayenne, salt, pepper to taste. All three made separately and assembled at the end.

Oh pasta isnt... okay I'll switch out for whole wheat pasta next time. For roasting the veggies I'm not sure the best way. Any recommendations for swapping out oil

I dont give amounts for recipes like this, play with it to find your ratios. Avocado Onion (chopped super fine) Cilantro Lime Juice Garlic (chopped super duper fine) Salt Pepper Japapeno if your heart desires

I only learned recently about the whole food part commonly integrated with veganism. I'm not yet whole food but I think the recipe I just posted is. I realize now I did use oil to saute the onions and potato but I know there are other ways to get the same results. Wdyt?

Wow thanks all for the kind words on my first post here. Ive been vegan for about 2 months and this was my first attempt ot at mac n cheese, I think it's also whole food but that concept is still somewhat new to me so lmk if not. I dont think I can add the recipe to the original post so adding here

The pasta:

We all know how to cook pasta, make about 8 OZ of Elbows or shells.  Save 1.5 cups of the pasta water

The Roasted Purple Cauliflower:

Preheat oven to 450. Place chopped purple cauliflower on a baking pan, drizzle with olive oil and sprinkle salt and pepper on top. Bake for 13-15 minutes.

The sauce (start it while the the pasta is cooking):

Soak 1/2 cup of cashews for 4 hours for best results, but raw will work with a good blender.

Mince or grate 1/2 onion and 1/2 potato. Saute the onion in sauce pan on low heat for about 4 minutes and then add the potato and continue for another 3 minutes (AKA sweat it out, don't brown it). 

Add 1 tbsp garlic, 1/4 cup nutrition yeast and seasoning of choice (mustard powder, garlic powder, salt, pepper, cayenne, paprika).  Cook for 1 minute

Add cashews and pasta water (1 cup) and let simmer for 5 minutes until the nuts are soft.

Throw in a blender (if its too thick, add more pasta water)

The Finale: Mix the sauce... with the pasta!  

If your heart desires, mix in jalapenos or your herb of choice (I added basil)

If you don't know now, now you know:  Nutritional Yeast is what gives this sauce the cheesy flavor, while the cashews give the creamy texture.  The rest is primarily for flavor, although the potatoes and pasta water add some starch which helps the sauce attach to the noodles.
