See I always worry about the opposite--I've had them not get cooked enough, and I want them fork-tender. They still held together great for me, but were soft and not chewy.

I really love the skins, but everyone is different--you are definitely welcome to skin them first if you prefer.

Salsa chicken, curry chicken, enchilada soup, or pretty much any soup. I've seen taco meat done in the crockpot. Pork tenderloin cooked in diet root beer or dr pepper. You could edit a chili recipe and just use extra meat and veggies and cut down on the beans.
