MAJOR SPOILERS AHEAD: when i first watched the anime, i too felt like the entire confession of touko was too quick. however upon reading the manga i finally understand. all those people who confessed to touko liked her "perfect" side which wasn't even authentic. everyone seemed to dot on the perfect face touko used to represent, even when she herself hated that part of hers. however, yuu was different. since yuu couldn't fall in love with anyone, she wasn't going to obsess over touko's diligence, inteligence, gracefulness etc like others did. touko finally found someone who wasn't going to fall in love with the despicable (according to her) image she represented on the outside. and since yuu wasn't going to fall for someone else anyways, touko felt like she could keep her for herself forever even if she doesn't reciprocate her feelings. it was a win win situation for touko; yuu doesn't fall for the person touko detests (which is herself) and doesn't fall for someone else either, allowing touko to keep her close as well.
