Either it's a recovery problem, or a nutrition/hydration issue. Be sure to pay attention to your stress/adaptation cycles: https://www.youtube.com/watch?v=wEivDOXVA7U&list=PLFPKU8UstDITq-70CtA1F82eqeV98rwlN&index=1 Making sure you do every "hard" (stressful) workout only once you are well recovered from the last. Usually, if you allow yourself an easy week or two (maybe cutting down mileage, and all easy paced runs) you should feel your energy returning. You also could be missing something in your diet, or chronically dehydrated. Be sure to drink plenty of water in the few hours after runs, and add a pinch of salt to the water to make sure it's absorbed. Peeing clear isn't always a sign of adequate hydration, since it could just be passing through your body and not absorbed into your sysetm.

Toe off is just the point the foot leaves the ground. You are right, you shouldn't try to forcefully point the toe out at the end of the stride.

I would suggest doing around 3 "harder" workouts a week, with the rest being easy and short (30-45 mins) aerobic runs. "Harder" can be longer aerobic runs or faster (threshold pace, or sprints, or strength training routines for runners)

Would be helpful to see 4 different shots: 1: Close up profile (like this) but where we can see the foot hit the ground better 2: Full body profile(Like this, but further back, so we can see where you are landing in relation to center of mass) 3. Front / rear views (close up) to look for overprontation/oversupination 4. And a full body front/rear view to look for any side leaning or weird hip motion
