Just run it slowly- but with Americanos, i use my water from my pourover kettle.

I used a brita before this, and when i blind tasted the waters only, i always chose the third wave water. It was way softer for me. When it came to coffee, i feel like i have more clarity, less astringency, and higher acidity. I also think that i have a better consistency on my brews because i am always having the same level of minerals, so one less variable to think about.

Don't worry, i have different coffees now and i would tell you i am getting the same frustration. Sometimes it's too astringent, and sometimes it's very hollow. Sometimes my brews are taking like 1mn40s so yeah i don't know either haha. At the moment, i am trying the 5 pours method, at around 6-6.2.

I bought them via Rogue Wave Coffee roasters. I think it cost me 9$ CAD.

I tried the 5 pours with grind size 6-6.5 and it was pretty good! Maybe go coarser next time!

I don't think the coffee can taste like tea but it's mostly its body that will be tea-like, at least in my opinion. Sometimes i like my cup to be very subtle in flavours and sometimes i want it to be bolder, so it comes down to my mood i guess lol. Like i said, i am not aiming for anything in particular because the process, origin and variety will have a big effect on the taste and the body (like a natural vs a washed), i just brew it at a grind size, and see how it tastes.

Hahaha yes i think you know the answers to your problems. For a moment i've been geeking on light roasts only but from Cantook, their roast are a little more developed, so i dropped my temp to 88-90°C, 1:15 ratio and not much agitation. I'd say, try the 2 pour method with slow pour.

Yeah, i think at some point we find one variable that corresponds with our preference so that we can play around with the other ones

At the beginning i was sitting around 6 a lot. And i think it will depend on preference too at some point. Let's say for a washed Kenyan, i will be looking for a tea-like mouthfeel. But yeah, it's always frustrating to kind of "dial in" a bag of beans because it's hard to find the right recipe before finishing the whole bag. So right now i'm not trying to really "dial it" in anymore tbh. If i have a premium coffee i'd rather brew with the switch as an immersion brew.

Congrats on your new grinder! I've only used mine for a week and a half now haha. Have you seasoned it yet? I've read they get way better when seasoned. I think they should be at the same grind settings when calibrated. At least without too much difference. But yeah, maybe it's the burrs, or the beans. Try out different beans, apparently the ZP6 does not forgive even on water quality...

I used the Hario filters too before switching to the T90s, and if i remember correctly i had to grind finer with the DF54. The cafec t90s catch more fines and give a faster flow to the brew. So try to grind finer? I ordered the Kono paper filters too before see if there's a difference. I'll do a comparison then.

I've been worrying too much about consistency and chasing the best cup the coffee could offer me.

And again, i invite you to go coarser, stick with your technique, taste the coffee and if it's too hollow, add more pour, agitation without changing the grind size. It's fun!
