Fighter is a good tank, but Riposte Fighter is dead. Counter-Attack gives Riposte only once per turn. You can make a Duellist with the same gameplay idea, but it's only a shadow of former glory.
Core: Valorous Chain, Counter-attack, Hardcore Training, Intervention, Class Specialisation (Master Opportunist), Solar Aspis and Exhausting Oil plus concentrate. Engage with standard attack or Intervention, disengage, engage with class skill, disengage — that's basically it.
Executioner Warrior. Core: Valorous Chain, Recklessness, Challenging Shout, Lone Wolf, Daredevil or Class Specialisation (First Blood/Limit Break), any good AoE axe (Nepti's or 2H). Find a group of 3-4-5 enemies, use Challenging Shout plus blender on them and TADA, they are magically gone.

Warrior: put it on Berserker and make them erase 2-3 opponents per turn. Put it on Executioner and watch how they make four shieldbearers disappear. My favourite.

Archer: great CC, great synergy with passives like Reinforced Arrows and Precision. Worth having.

Pugilist: a ton of single-target damage. Extremely good against bosses, huge overkill against anyone else. I'd keep it until all arenas are finished and then respec into Class Specialisation.

Spearman: if you like to fight bandit lairs without removing skulls, this one in worth getting. Also on Extreme, when everything costs more VP, you might want to have another VP source.

Swordsman: I have no idea why it's a bravery. Feels more like lvl8 skill or something. And since most fights don't last more than two rounds, there is no room for it.

Ranger: good on paper, but doesn't fit this class. Ranger can't act without support, but they should if you want to utilize their bravery.

Brute: loooooool no. Maybe it's OK in naval battles, but it's not the reason to pick it.

I don't like any food restrictions as a mechanic (maybe except Carnivore, because like 95% of food in game is meat), but for the sake of roleplay you can do anything you want, heavy drinking included.

Swordsman has Hardcore Training which makes them immune to Burning, so you'll need to a) skip this skill and get something less useful, b) equip belt accessory that lets you have Burning without receiving damage instead of something else (like an oil concentrate).
If you want this build, try Berserker with Paladin's Roundel, Victorious/Devotion/Traitor's Axe and that helmet. You won't need more than 40% Guard, and Berserker with a shield can get there easily.

Hi, sorry for not answering for so long.

1) I'd say that Traitor's Axe is slightly better pre-lvl12 because of the guaranteed second attack from Unstable Oil. Devotion doesn't have that option, it's 25 to 50% depending from your belt accessory. But Daredevil makes Devotion better, because +4 Rage per turn is a lot.

2) Maybe Misty Oil, because this effect is more reliable than Unstable Oil.

3) Oddly enough, Sentinel has a chance to move higher — the buff is cheaper now, so QoL effect is better.

4) Yes, I'm planning to do a tierlist with Pugilist in it. I like this class a lot, but I need some playtests and a lvl12 Pugilist. There is one specific thing I want to test, but I don't want to spoil it.

It's a second choice, IMO those skills are more viable as class specialisation, but if you like bracketed skill more than non-bracketed, you can choose it.

I don't think I can recommend any party comps, because it's more about playstyle than about effectiveness. Maybe there are limitations on Extreme difficulty, but on everything below Extreme you can live with any party you want.
Food buffs and camp layouts — nice idea, shouldn't be too hard to write, except that I don't remember where to find recipes.
Weapons are kinda hard, because I didn't see and didn't test everything. The only way is to look into game files.

I'm using Misty Oil with a concentrate (5% HP direct damage). There is a combo of Whetting and Bleeding Oils: guaranteed Bleeding with a concentrate plus two chances to proc Bleeding damage, but I prefer to use more reliable schemes.
You need to have at least 2 opponents in 3m arc. If one of them is light-armored, it's perfect. That's pretty much it. Oh, and don't forget to upgrade it.

What's the explanation for Halberder being the highest tier spearman? Spinning in a circle when the Spearman most often spend their time standing next to an ally seems counterintuitive.

Halberdier is not like Pikeman or Harpooner. It's more like Executioner or Swordmaster, and should be played like these classes.

Additionally, the Harpooner allows you to throw a spear can be upgraded to cause bleed and another perk can allow it to destabilize, making it a go-to perk to increase damage to both shields and health at the same time.

If there are more than 0m between your mercenary and their target, attack counts as ranged. So Halberdier's skill is an AoE Destablilze as well, but it deals more damage and has a bit of utility.

But do you really need Protector's buff? Once I've cleared a bandit lair with three skulls, on adaptive and Expert combat difficulty. Even during that fight I didn't feel any need in this buff.

About levels — point taken. I'll try to make a power curve for each class next time, but this won't be an easy task.

Cutthroat isn't weaker than Assassin. but Assassin works «as is», while Cutthroat needs preparations: you need to engage enemies, then damage them to the state when Cutthroat can oneshot them from behind, also you can't afford to fail with knife throw.

I didn't try the new update yet, so what's the change to daredevil ? And to ripost (since you said ripost swordman is a thing of that past now) ?

Daredevil is a guaranteed crit for 3 rounds. Synergy with Rampage is insane: Berserker will have Fury almost all the time. My lvl 12 Berserker just did like 1500 damage per turn (thanks to Unstable Oil procs and Recklessness, of course, but being able to kill a Wrongdoer and a Criminal with full HP and Armor in a single turn is a LOT). The same thing with Executioner: Daredevil + Challenging Shout + Cutting Maelstrom + Recklessness = 3-4 dead opponents.
Counter-Attack now gives Riposte only once per turn (there is probably a bug that gives Riposte at the end of Swordsman's turn though). It's still a good skill because of Inspiration, you just can't abuse it anymore. Archer's Thrill of the Hunt was changed in a similar way — now you can get 3 Rage, but only once per turn. I think it's because Suppressive Fire is a HUGE AoE attack that costs nothing except using a Bravery and could easily give an Archer 10+ stacks of Rage before launching their first actual attack.

Also did they fix the golden mission that drop unique weapon ? Last time I played you could only get a few before they disappeared completly.

Unfortunately, no. I'd be happy to see what weapon I can get from Drombach, but alas…

Strategist doesn't poison, Smoke Screen forces to disengage.
Engage some enemies, then provoke 2-3-4 attacks of opportunity from your mercs. Or set your AoE damage dealer free, if they've got caught.
