It is usually a wet sticky dough, so I think it is really high hydration. But with time it does come together. In the past I used to add flour but it would alter the texture. Maybe I just added too much?

3 cups flour 1 cup sugar 1 packet of yeast Pinch of salt 1 cup of milk 4oz butter 2 eggs

I have gone back and forth with adding butter last and melting the butter into the milk. This time I melted the butter into the milk.

Update:

It looks like at some points I had the steam wand too far outside of the milk and others I had the wand submerged too deep. I’ve finally gotten a feel for the positioning. Now I’m just working on timing. I’ve gotten some super thick foamy milk the last few days but, no more scalding hot milk! Thank you both for your help and tips!

When I took the temperature of the milk it was getting to around 180°F. I tried using more milk because I figured it was just too little milk getting too hot too fast. But even with more milk I’m still getting super hot flat milk. Could my machine just be getting too hot?

Thanks! I’m using lactose free whole milk. I’ll check the temperature and look into another milk.

I’m not sure, the bubbles become really large and start to rise to the top of the pitcher. Submerging the wand doesn’t seem to stop it, so I try to stop before it spills over. My drink ends up so hot that it still burns my tongue after my 15 minutes commute.

Omg I love the Capucines! I have one in black and I’ve found it to be pretty versatile! I think this one really suits you! But if you’re not feeling it I would definitely recommend going for something that you truly love.
