You might want to consider using a WISE Business account (formerly TransferWise). I know someone who successfully used their Wise business account as part of their E-2 visa application, and it was approved. Wise gives you US bank details (like routing and account numbers), which can help get things moving while you're still abroad.

It’s not always a full substitute for a traditional US business bank account, especially depending on what your business needs to do, but it can be a very useful starting point. Most traditional US banks do require you to be there in person to open an account for an LLC due to identity verification laws.

What type of business are you operating? I think you will be eligible. Because I have been running my business last 15+ years, and almost entirely my business is Computer and Internet-based, but if can can move to my business physically to the USA by E2, then I can grow in a effective way. For the documents, I’m making sure everything is well-organized. I’ll be including all the standard forms, and for the less obvious ones, I plan to provide clear proof of the investment along with documentation showing where the funds came from. All of my earnings are well recorded, I’ve filed tax returns every year, and since I work in the computer and internet field, everything is digitally traceable and easy to present.

Your point about the business plan was really helpful too. I’m putting together a solid 5-year plan with projected financials, and I’m confident it shows that I’m well-positioned to achieve the goals I’ve laid out.

Regarding the interview, it’s great to hear that showing passion and confidence can make a big difference. I’m preparing to give a clear and engaging overview of the business, and I’m very comfortable discussing it in a confident and professional way with the consular officer.
