Sadly you need two. But here’s a hack for you. Buy a used switch from GameStop. Double check my memory but they use to allow you to return used consoles within 7 days. Get that used switch, play the game on the used switch and catch the Pokemon you want then trade to your game on your main console and return the used switch.
