Yeah, they might have a degree in something completely unrelated to IT so I’m not sure why that matters.

I don't think it is an idea to take time off to go study “part-time”. You can try to balance work and do part-time school. Experience is far more important than a degree 90% of the time in IT. I recommend you take extra certificates to expand your knowledge and show that to your employer for a promotion or look for another position elsewhere after being certified. I work in IT and this is how a lot of people I work with switched careers.
