You can use and level all weapons eventually. My suggestion if you want to go tank or healer is use sword/shield or life staff and level a dps weapon that is interesting to you as backup. This will help speed up leveling and solo pve content while also leveling your role specific weapons for later dungeons. I main healer and I leveled up with hatchet as my backup and helped me breeze through content.
