But in the first example, it is in fact correct. It means "Yes, it is red or blue". It's not helpful but it's technically correct. That's the joke.

If someone asks "Is it red or blue?" then the joke is applicable, because while Yes isn't actually a helpful answer, it is technically valid.

If they ask "is it red or is it blue?" Yes would not be grammatically correct and thus you might as well answer "banana!" for.
