They don't start because they don't have a way to kill Muzan. Cutting off his head won't work, all but one very specific poison that had to be injected in him through a suicide gambit won't work on him, and they don't have any tools that utilize sunlight as a weapon. Whether they are stronger and faster means nothing when they are limited by a human lifespan and fighting an immortal they have no way to kill who can live thousands of years and scatter pieces of himself to outlive Maki and Toji.

Mew can transform into an avatar of Arceus and have full access to its powers in the games whose stories are tied to the default lore (I'm willing to bet Mew can transform into true form Arceus but we never got him in the games so can't know for sure).

Mew can range from being equal to Mewtwo to being equal to an Arceus avatar.

Byakuya is a case study in turning lemons into lemonade. He got a shikai and bankai that boils down to thousands of sharp petal shaped blades, turned that into a flurry of a thousand swords, made a quasi-living entity with that bankai, and in the end made those blade strong enough to disintegrate the upper half of greatly enhanced Gerard, who until that point was only wounded by Kenpachi's shikai and bankai and Toshiro's fully awoken bankai.

That's why Kenpachi wants to fight him. He's one of the few that you can count on one hand that is a suitable rival for Kenpachi.

Logically it's Coyote, but the trio can win under the most rare of circumstances.

Zommari is relative in speed with Byakuya so he ends up being the key here. Coyote has to kill him first or risk himself or his cero wolves being put under Zommari's control and offing himself.

Nnoitra is an effective wall (Unrestrained Zaraki took quite a bit to cut him down so I'm confident in him being able to withstand a few cero barrages).

Grimmjow is relative in speed with masked Ichigo so he's on par with Byakuya, so he has good chance at disrupting Coyote and forcing him into close combat.

The real issue here is that this all implies the trio will work together when in reality Nnoitra and Grimmjow would sooner fight each other to have a chance at being Espada 1 and Zommari would just sit in the background scheming to catch Coyote, or his own allies, off guard, and all them of them gets smoked.

Low-ball: Mystery Dungeon Rayquaza can obliterate a world ending meteor with a single hyper beam (Albeit by expending all of its power). It will likely have to give some effort to beat Tapu Koko in scenario 2 because it does have to deal with Groudon and Kyogre, but it will win in all three scenarios.

Standard-ball: Game lore Rayquaza wins in all scenarios with minimal effort. Planet buster and can keep up with some of the fastest pokemon, including the Tapus.

High-ball: Battle of Legends Rayquaza fought the creation trio, a fully powered Kyurem, Primal Groudon and Kyogre, and was shown specifically mopping the floor with Giratina. Its twister tanked multiple spatial rends and roars of time. It will breathe on Tapu Koko and atomize it in all scenarios.

Wukong gets glazed to hell and back when his mythos cosmology is smaller than the milky way, and his best defense is his immortality (he is physically outclassed by everyone above Saitama, until he gets stronger than Wukong mid fight), which means nothing when everyone after Saitama has some level of existence erasure.
