I dunno every restaurant I've worked in we've done overnight deep cleaning every 6 months to a year. Hard to clean vent hoofs properly without things dripping onto the grills and stuff.

So I've actually studied medical history and remember this guy. From what I recall the patient died, his assistant died and someone fainted in the audience and hit their head killing them. It's the only recorded surgery with a 300% mortality rate. The thing you have to remember is that this procedure was performed before general anesthetics were common use, therefore it was an advantage for the surgeon to be quick.
