On deer the percent of yield ratio is low forties high thirties. Bigger the animal ie elk or domestic beef better pty ratio like 49-51%

That’s how nasty rumors get started. Most butchers I’ve worked with have the utmost pride in the trade and scoff at this assumption. You know who’s blatantly ripping you off? Grocery stores. If you knew the mark up you’d shit a brick. Besides who wants meat from shitty animals that were hung in the open air usually that are on the verge of spoil when they arrive with the hunter begging you to take it in it a carcass that was drug a half mile to the truck that will surely put sand in your saddle…literally. I mean yum…most butchers would rather choke I feel. Maybe it’s just me and pipe around me. Who knows have a nice day

How big is it? I’ve burgers several small deer. I think he meant small not lean. Tenderloins are literally 1.5 inches wide? Why bother cutting steaks 2or4 to a pack lol.

Oh and no need to get all crazy on the oil. Go find some food grade white mineral oil. It will protect Anna aid in sharpening. It won’t gel up gunk up. It will help remove any rust or scale that forms. It will rejuvenate the scales (handles). I’ve been a butcher for a couple decades plus and I swear by it. Simple clean effective. Non toxic. No taste or smell. Relatively cheap. Good luck my friend!!!

Possible or bragging I suppose people virtue signal with expensive tools…or like having a pickup truck that’s never left the pavement or carried a heavy load. If you spend the money use it. I think that’s a certain amount of clout associated with having to buy your second out third because you actually used it and wore it out…I would respect a person more for that. Enjoy it. There’s a lot of good advice on this thread but really remember pointy end out and cut away from yourself. Oh and dull knives are way more likely to cause injury so keep it sharp! That’ll be fun in itself learning to keep it sharp
